I have just tested the vCO 5.1.1 client on OSX and Windows 7 with attempting to run a workflow from the client with several input parameters. I resized my "Start Workflow" window vertically until some of the inputs were no longer visible and I got the vertical scrollbar. I'm unsure what you're issue may be.
